  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup crumbled feta cheese
  • 3 tbsp extra virgin olive oil

  • 1 tbsp honey or maple syrup

  • Salt and pepper to taste

Instructions

  1. 1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. 2. Toss sweet potato cubes in olive oil, salt, and pepper until evenly coated. Spread them on the baking sheet in a single layer.
  3. 3. Roast for 25-30 minutes until tender and caramelized, flipping halfway through.
