  • 1 pound Boneless Skinless Chicken Thighs
  • 2 slices Ginger
  • 1 stalk Lemongrass
  • 3 leaves Makrut Lime Leaves
  • 2 tablespoons Lime Juice
  • 1 cup Sweet Bell Peppers
  • 1 cup Cherry Tomatoes
  • 1 cup Fresh Mushrooms (Enoki or Oyster)
  • 2 cups Jasmine Rice

Instructions

  1. Prepare all ingredients by chopping vegetables and slicing the chicken.
  2. In a large pot over medium heat, sauté ginger, lemongrass, onion, and dried Thai chiles until fragrant (about 2–3 minutes).
  3. Add coconut milk and chicken stock; stir well and bring to a gentle simmer.
  4. Add the chicken thighs and cook until no longer pink (7–10 minutes).
  5. Incorporate sweet bell peppers, cherry tomatoes, mushrooms, coconut sugar, lime juice, fish sauce, and makrut lime leaves; simmer for another 5–7 minutes.
  6. Serve over jasmine rice and garnish with fresh cilantro and lime wedges.
