  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups chicken broth
  • 8 oz uncooked lasagna noodles, broken into pieces
  • 15 oz ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish

Instructions

  2. Add chopped onion and sauté until translucent; stir in garlic and cook until fragrant.

  4. Add broken lasagna noodles and cook according to package instructions until al dente.
  5. In a separate bowl, combine ricotta cheese with half of the mozzarella and Parmesan; mix well.
  6. Stir in cheese mixture into the soup once noodles are cooked until creamy.
