  • 2 pounds baby potatoes
  • 1 cup Kalamata olives
  • 1 cup feta cheese
  • 1 cup cherry tomatoes
  • 1 large cucumber
  • 1 medium red onion
  • 1/4 cup fresh parsley
  • 1/4 cup fresh dill
  • 1/3 cup extra virgin olive oil
  • 3 tablespoons red apple vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder

Instructions

  1. Boil baby potatoes in salted water until tender (15–20 minutes). Drain and cool before cutting.
  2. Chop cucumber, halve cherry tomatoes, slice onion, and finely chop parsley and dill.
  3. In a bowl, whisk together olive oil, red apple vinegar, Dijon mustard, oregano, and garlic powder.
  4. In a large bowl, combine potatoes, olives, feta, tomatoes, cucumber, onion, parsley, and dill. Drizzle with dressing and toss gently.
  5. Chill for at least 30 minutes before serving to enhance flavors.
