  • 3 cups boneless, skinless chicken breasts (about 34 breasts)
  • 3 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 1 cup bell peppers (any color), diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese, softened
  • 2 tbsp taco seasoning

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Sauté the onion and garlic until fragrant, about 3 minutes.
  2. Add the diced bell peppers and cook until slightly softened.
  3. Nestle the chicken breasts into the pot and pour in enough chicken broth to cover them. Bring to a gentle boil, then reduce heat and simmer for 20 minutes.
  4. Remove the chicken from the pot and shred it using two forks before returning it to the pot.
  5. Stir in the softened cream cheese and taco seasoning until well combined and creamy.
