  • 1 lb boneless chicken breast, thinly sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1 cup snap peas
  • 2 tbsp vegetable oil
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp soy sauce
  • 1 tsp cornstarch mixed with 2 tbsp water
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions

  1. In a bowl, season the chicken with salt, pepper, and 1 tablespoon of soy sauce. Set aside to marinate.
  2. Heat 1 tablespoon of vegetable oil in a wok over high heat. Stir-fry the marinated chicken for about 4-5 minutes until fully cooked. Remove and set aside.
  3. Add the remaining oil to the wok and sauté the minced garlic and ginger for about 30 seconds until fragrant.
  4. Stir-fry carrots and broccoli for approximately 2 minutes before adding red bell peppers and snap peas. Cook for another 2 minutes until all vegetables are crisp-tender.
  5. Return the chicken to the wok; add remaining soy sauce and mix well.
  6. Push ingredients aside; pour cornstarch mixture into the center and stir quickly until thickened (about 1 minute).
  7. Toss everything together until coated in sauce; serve immediately over rice or noodles.
