  • 2 cups cooked and shredded chicken
  • 1 can (10 oz) red enchilada sauce
  • 2 cups shredded Monterey Jack cheese
  • 8 flour tortillas
  • 1 tablespoon vegetable oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Prepare the chicken by boiling or baking until fully cooked and shred it using forks.
  2. Heat vegetable oil in a skillet over medium heat. Sauté chopped onion and minced garlic until soft.
  3. Add shredded chicken to the skillet along with cumin, chili powder, salt, and pepper. Stir well for an additional 3–5 minutes.
  4. Lightly coat the bottom of a baking dish with some enchilada sauce.
  5. Fill each tortilla with a spoonful of the chicken mixture and sprinkle with cheese before rolling tightly.
  6. Place rolled tortillas seam-side down in the baking dish. Pour remaining enchilada sauce over the top and add any leftover cheese.
  7. Cover with foil and bake in a preheated oven at 375°F (190°C) for about 20–25 minutes. Remove foil to bake for an additional 5–10 minutes until cheese is bubbly.
  8. Let cool slightly before serving, garnished with cilantro.
