  • 3 ½ cups peeled fresh ginger
  • 4 cups water
  • 5 cups white sugar
  • 1 (3 oz) pouch liquid pectin
  • 5 half pint canning jars with lids and rings

Instructions

  1. Cut ginger in half; cube one half and shred the other.
  2. Combine cubed ginger with water in a pot; simmer for 1 hour and 15 minutes. Drain ginger but reserve ½ cup of the liquid.
  3. Chill cooked ginger in the fridge for 4 hours.
  4. In a large pot, mix chilled ginger, reserved water, and sugar; bring to a boil for 1 minute.
  5. Stir in pectin; simmer for an additional 7 minutes while skimming off foam.
  6. Sterilize jars by boiling them in water.
  7. Fill each jar with hot marmalade, leaving about ¼ inch space at the top; remove air bubbles.
  8. Process jars in boiling water bath for 15 minutes to seal.
  9. Cool completely before checking seals and storing.
