Ingredients

Scale
  • 1 cup strawberries, hulled and sliced
  • 1 large English cucumber, thinly sliced
  • 2 tbsp chopped fresh mint or basil
  • 1 tbsp fresh lemon juice or balsamic vinegar
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Optional: 2 tbsp slivered almonds or walnuts

Instructions

  1. Wash and dry the strawberries and cucumber. Hull the strawberries and slice them thinly. Thinly slice the cucumber into rounds.
  2. In a small bowl or jar, whisk together the lemon juice (or vinegar), honey (or maple syrup), olive oil, salt, and pepper to create the dressing.
  3. In a large mixing bowl, combine the cucumbers, strawberries, chopped herbs, and nuts if using.
  4. Drizzle half of the dressing over the salad and gently toss to coat without crushing the fruit.
  5. Serve on a platter garnished with additional nuts and herbs if desired, drizzled with remaining dressing.
