  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) diced tomatoes, with juice
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Add diced onion and minced garlic to the skillet; sauté until the onion is translucent.
  3. Transfer the beef mixture to a slow cooker. Add kidney beans, black beans, corn, diced tomatoes (with juice), beef broth, and spices. Stir well.
  4. Cover and cook on low for about 6 hours or high for 3 hours.
  5. Once done, stir the soup well and adjust seasoning as needed before serving.
