  • 2 slices Turkey Bacon (cooked, drained, and finely sliced)
  • 1 large yellow onion (diced)
  • 1 cup carrots (thinly sliced)
  • ¾ cup celery (diced)
  • 1 tsp salt
  • 1½ tsp black pepper
  • 4 tsp garlic (minced)
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • ½ tsp dried parsley
  • 1 tbsp tomato paste
  • 2 (15 oz) cans crushed tomatoes
  • 2 (15 oz) cans cannellini beans (drained and rinsed)
  • 4 cups low sodium chicken broth
  • 6 cups water
  • 1 (16 oz) box of ditalini pasta (uncooked)
  • 1 cup Parmesan Reggiano

Instructions

  1. Cook turkey bacon in a skillet until crispy. Drain excess fat, slice finely, and add to the slow cooker.
  2. In the slow cooker, combine diced onion, sliced carrots, diced celery, garlic, tomato paste, crushed tomatoes, drained cannellini beans, chicken broth, water, and seasonings. Stir well.
  3. Cover and cook on low for 7-8 hours or high for 4-5 hours.
  4. About 30 minutes before serving, stir in uncooked ditalini pasta until cooked through.
  5. Serve hot with freshly grated Parmesan Reggiano.
