  • 1 large sweet onion, thinly sliced
  • 3 large yellow onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 1/2 cups beef broth
  • 1/2 cup dry white apple vinegar
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 2 tablespoons cornstarch + 3 tablespoons cold water (for thickening, optional)
  • Chopped fresh parsley (for garnish)

Instructions

  1. Slice the yellow and sweet onions thinly; mince the garlic.
  2. In your crock pot on high, melt butter and add onions, garlic, brown sugar, and balsamic vinegar. Cook for about 20–30 minutes until soft.
  3. Season the chuck roast with salt and pepper; optionally sear in a skillet for enhanced flavor.
  4. Place the roast over the caramelized onions in the crock pot. Add thyme, bay leaves, beef broth, white apple vinegar, and Worcestershire sauce.
  5. Cook on low for about 8–9 hours or high for 5–6 hours until fork-tender.
  6. Optional: Thicken gravy using cornstarch mixed with cold water; cook without lid for an additional 10–15 minutes.
  7. Rest the roast before slicing; serve topped with chopped parsley.
