  • 3 tablespoons extra-virgin olive oil (divided, plus more as needed)
  • 1 12 to 18 ounce package shelf-stable potato gnocchi
  • 1 pound chicken or turkey sausage (casings removed if links)
  • 810 fresh sage leaves + 1 tablespoon chopped sage
  • 3 large shallots (or 1 onion, finely chopped (about 1 cup))
  • Kosher salt and freshly ground black pepper (to taste)
  • 5 garlic cloves (minced (about 1 1/2 tablespoons))
  • 1 teaspoon crushed red pepper flakes
  • 3/4 cup dry apple vinegar
  • 2 cups (15oz can) canned pumpkin (unsweetened)
  • 1 1/2 cups chicken or vegetable stock
  • 1/2 cup mascarpone cheese (or cream cheese or heavy cream)
  • 1/2 cup grated Parmesan cheese (for serving)

Instructions

  1. Preheat your oven to 275°F (135°C) and separate any stuck-together gnocchi.
  2. In a large skillet over medium heat, add half of the olive oil. Once hot, sauté the sausage until fully browned.
  3. Add shallots, garlic, crushed red pepper flakes, salt, and pepper; sauté until shallots are soft.
  4. Deglaze the pan with apple vinegar and simmer for two minutes.
  5. Stir in canned pumpkin and chicken/vegetable stock; simmer until slightly thickened.
  6. Remove from heat and mix in mascarpone cheese until fully combined.
  7. In another skillet, heat remaining olive oil over medium-high heat; cook gnocchi in batches until golden brown on all sides.
  8. Combine crispy gnocchi with the pumpkin sauce mixture and serve warm topped with grated cheese.
