  • 2 slices fresh tomato
  • 2 tbsp cream cheese (or dairy-free spread)
  • 2 eggs
  • 1 cup baby spinach
  • 1 cup sliced mushrooms (cremini or button)
  • 1 garlic clove, minced
  • 1 tsp olive oil or butter
  • Salt & pepper to taste

Instructions

  1. Boil the eggs for 7 minutes for jammy yolks. Cool in ice water before peeling and halving.
  2. Toast the bread slices until crispy.
  3. In a skillet, heat olive oil or butter over medium heat. Sauté mushrooms and garlic for 5-6 minutes until golden brown; season with salt and pepper.
  4. Wilt the spinach in the same skillet with a dash of oil and seasoning.
