Ingredients

Scale
  • 4 boneless skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tbsp unsalted butter
  • 1½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and pepper (to taste)
  • ½ tsp dried thyme
  • Fresh parsley for garnish

Instructions

  1. Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In a skillet over medium heat, heat olive oil and sear the chicken for about 5-7 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, add rice and stir for 1 minute before adding chicken broth and salt. Bring to a boil, then cover and simmer for 15-20 minutes.
  4. For the creamy sauce, melt butter in another pan, whisk in flour until smooth, then gradually add milk and remaining broth while stirring until thickened. Stir in garlic powder, thyme, cheddar cheese, and Parmesan until melted.
  5. Combine the chicken with the cooked rice and pour the creamy sauce over everything. Let simmer for an additional 5 minutes before serving.
  6. Garnish with fresh parsley.
