  • 300g rotini pasta
  • 2 chicken breasts, diced
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • Salt & pepper to taste

Instructions

  1. Cook the rotini pasta in salted water according to package instructions. Add broccoli in the last 3 minutes of cooking. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté diced chicken until golden brown (5-7 minutes). Stir in minced garlic and cook for an additional minute.
  3. Add heavy cream and chicken broth to the skillet, then stir in grated Parmesan cheese along with salt and pepper. Simmer until slightly thickened (3-4 minutes).
  4. Combine the drained pasta and broccoli with the sauce in the skillet, tossing to coat evenly.
  5. Serve garnished with extra Parmesan and fresh parsley if desired.
