  • 12 oz smoked sausage (sliced)
  • 1 Tablespoon cajun seasoning (divided)
  • 1 medium yellow onion (diced)
  • 2 bell peppers (any color, diced)
  • 2 cloves garlic (minced)
  • 1/2 cup grated parmesan cheese (plus more for serving)

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and reserve 1 cup of pasta water.
  2. In a large skillet, heat olive oil over medium-high heat. Add sliced sausage and 2 teaspoons of Cajun seasoning; cook until crispy and golden.
  3. Reduce heat to medium, add onion and bell peppers with remaining seasoning; sauté until softened. Stir in garlic.
  4. Whisk together chicken broth, heavy cream, and tomato paste in the skillet; bring to a gentle boil and simmer until slightly thickened.
  5. Stir in cooked pasta and sausage; toss well to coat with sauce. Adjust consistency with reserved pasta water if needed.
