  • 1 lb boneless skinless chicken breast or thighs
  • 12 oz rotini pasta
  • 4 oz cream cheese
  • 1 cup Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1 cup heavy cream
  • 1 cup whole milk
  • 2 tbsp olive oil
  • 1 tbsp butter (for searing)
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & black pepper, to taste
  • 4 cloves garlic, finely minced
  • 2 tbsp butter (for sauce)
  • Pinch of red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook rotini pasta in boiling salted water until al dente (10-11 minutes). Drain and set aside.
  2. In a skillet, heat olive oil and butter. Season chicken with Cajun seasoning and sear until golden brown (6-8 minutes). Remove from skillet.
  3. In the same skillet, melt butter, sauté garlic, then stir in heavy cream and milk. Add cream cheese and whisk until smooth, then mix in Velveeta and mozzarella.
  4. Combine cooked rotini with the sauce until coated; add reserved pasta water if needed.
  5. Serve with seared chicken on top and garnish with parsley.
