- 1 lbs boneless, skinless chicken breasts
- 12 oz rotini pasta
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1 cup cubed Velveeta cheese
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and black pepper, to taste
- 3 cloves garlic, minced
- 1 cup reserved pasta water (if needed)
- 1 tablespoon chopped parsley (optional)
- Season chicken strips with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
- In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Sear chicken until golden-brown and cooked through.
- Cook rotini in salted water until al dente; reserve pasta water before draining.
- In the same skillet, melt remaining butter and sauté minced garlic. Add heavy cream and let simmer.
- Stir in Velveeta until melted; then mix in mozzarella and Parmesan until creamy.
- Toss cooked rotini in the sauce to coat well with the cheesy goodness.
- Serve with Cajun chicken on top and garnish with parsley if desired.
