  • 1 lbs boneless, skinless chicken breasts
  • 12 oz rotini pasta
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1 cup cubed Velveeta cheese
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • 3 cloves garlic, minced
  • 1 cup reserved pasta water (if needed)
  • 1 tablespoon chopped parsley (optional)

Instructions

  1. Season chicken strips with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  2. In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Sear chicken until golden-brown and cooked through.
  3. Cook rotini in salted water until al dente; reserve pasta water before draining.
  4. In the same skillet, melt remaining butter and sauté minced garlic. Add heavy cream and let simmer.
  5. Stir in Velveeta until melted; then mix in mozzarella and Parmesan until creamy.
  6. Toss cooked rotini in the sauce to coat well with the cheesy goodness.
  7. Serve with Cajun chicken on top and garnish with parsley if desired.
