  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • 12 oz rotini pasta
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1 cup Velveeta cheese, cubed
  • 3 cloves garlic, minced
  • 1 cup reserved pasta water (if needed)
  • 1 tablespoon chopped parsley (optional)

Instructions

  1. Season chicken strips with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  2. In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown.
  3. Cook rotini in salted boiling water until al dente; reserve 1 cup of pasta water before draining.
  4. In the same skillet, lower heat and melt remaining butter. Sauté minced garlic until fragrant.
  5. Add heavy cream and bring to a simmer; stir in Velveeta until melted.
  6. Mix in mozzarella and Parmesan until creamy; adjust with reserved pasta water if needed.
  7. Toss cooked rotini with the sauce until well coated, and serve with chicken on the side. Garnish with parsley if desired.
