  • 1 cup shredded mild or medium cheddar cheese
  • 1 can (10.75 oz) cream of mushroom soup
  • 1/4 cup mayonnaise
  • 1/4 cup milk
  • 1 egg, lightly beaten
  • 1/8 teaspoon salt
  • 1.5 cups crushed crackers (Ritz and/or Keebler Club)
  • 1/4 cup melted butter

Instructions

  1. Thaw and drain broccoli florets well after microwaving for about 5 minutes.
  2. In a large bowl, combine broccoli, 1/2 cup cheddar cheese, cream of mushroom soup, mayonnaise, milk, egg, and salt. Mix thoroughly.
  3. Transfer the mixture to a greased baking dish and sprinkle remaining cheddar on top.
  4. In another bowl, mix cracker crumbs with melted butter; sprinkle over the broccoli mixture.
  5. Preheat oven to 350°F (175°C) and bake for 45-50 minutes until bubbly and golden brown.
