  • 1 cup pumpkin puree
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup liquid coconut oil
  • 1/4 cup sour cream or Greek yogurt
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch salt (optional and to taste)
  • For the Cream Cheese Filling: 4 ounces softened cream cheese
  • 1 large egg
  • 1/4 cup granulated sugar
  • 3 tablespoons all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
  2. In a large bowl, combine the egg, pumpkin puree, brown sugar, granulated sugar, coconut oil, sour cream, vanilla extract, cinnamon, pumpkin pie spice, nutmeg, flour, baking powder, baking soda, and optional salt; whisk until smooth.
  3. Pour about two-thirds of the batter into the prepared pan.
  4. In another bowl, mix together the cream cheese filling ingredients until smooth; pour over the batter in the pan.
  5. Spoon the remaining batter on top and smooth it out gently.
  6. Bake for approximately 48 minutes or until golden brown; check doneness with a toothpick.
  7. Cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
