  • 150 g granulated sugar
  • 150 g water
  • 380 g all-purpose flour
  • 100 g almond flour
  • 1/2 teaspoon salt
  • 230 g unsalted butter (softened to room temperature)
  • 100 g granulated sugar
  • 50 g brown sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 100 g dried cranberries (finely chopped)
  • Powdered sugar (for sprinkling)

Instructions

  1. Prepare the cranberry jam by cooking cranberries, sugar, and water over medium heat until thickened. Let cool completely.
  2. Make the cookie dough by whisking together flours and salt, creaming butter and sugars, then adding eggs and vanilla. Combine wet and dry ingredients and fold in dried cranberries.
  3. Chill the dough for at least one hour before rolling out.
  4. Cut shapes from the rolled-out dough, fill half with cranberry jam, and top with cut-out cookie shapes.
  5. Bake at 180°C (350°F) for about 12-15 minutes until lightly golden.
  6. Cool on wire racks and dust with powdered sugar before serving.
