  • Salt to taste
  • 1/2 cup balsamic vinegar
  • 2 minced garlic cloves
  • 1/4 cup cranberry sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon red pepper flakes
  • 2 tablespoons olive oil
  • 2 tablespoons vegetable oil
  • 1/2 cup beef broth
  • 2 cups cranberries
  • 6 sprigs thyme

Instructions

  1. In a large resealable bag, mix balsamic vinegar, garlic, cranberry sauce, brown sugar, red pepper flakes, salt, and olive oil.
  2. Pierce the ribeye roast and place it in the marinade bag. Seal and refrigerate overnight, turning occasionally.
  3. Preheat the oven to 350°F (175°C) and remove the roast from the marinade; pat dry.
  4. Heat vegetable oil in a cast iron pan over medium heat; sear the roast on all sides until golden brown.
  5. Add reserved marinade and beef broth to the pan along with cranberries and thyme.
  6. Transfer to the preheated oven and roast for about 20 minutes per pound until internal temperature reaches 140°F (60°C).
  7. Let rest for 15 minutes before carving.
