  • 2 lbs beef chuck roast, cut into large chunks
  • 1 tbsp coconut oil
  • 1 large yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/2 tsp chili flakes (optional)
  • 1 tbsp tomato paste
  • 1 (14 oz) can full-fat coconut milk

Instructions

  1. Heat coconut oil in a Dutch oven over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes). Stir in garlic and ginger; cook for an additional minute.
  2. Increase heat to medium-high; add beef chunks in batches and brown all sides for about 5-7 minutes. Remove beef from pot and set aside.
  3. In the same pot, add curry powder, turmeric, coriander, chili flakes (if using), and tomato paste. Sauté for about 2 minutes until fragrant.
  4. Return browned beef to pot and pour in coconut milk; stir well. Bring to a simmer while scraping up any browned bits from the bottom.
  5. Reduce heat to low, cover with a lid, and let simmer gently for about 2 hours or until beef is tender.
  6. Serve hot over steamed rice or alongside crispy fries.
