  • 1 yellow onion (diced)
  • 3 carrots (sliced)
  • 2 stalks celery (sliced)
  • 3 cloves garlic (minced)
  • 1 tablespoon tomato paste
  • 2 cups dry green lentils (sorted and rinsed)
  • 1 14.5 ounce can crushed tomatoes
  • 4 cups vegetable broth
  • 3 cups water
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 2 bay leaves
  • Black pepper (to taste)
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped parsley (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté diced onion for 2-3 minutes until translucent.
  2. Add sliced carrots and celery; sauté for 1 minute. Stir in tomato paste and cook for another 2-3 minutes.
  3. Incorporate minced garlic and spices (Italian seasoning, paprika, cumin, bay leaves) and sauté for 1 minute.
  4. Add rinsed lentils, crushed tomatoes, vegetable broth, and water (3 cups). Bring to a boil, then reduce heat and simmer for 20-30 minutes until lentils are tender.
  5. Remove bay leaves before serving. Stir in fresh lemon juice and adjust seasoning to taste.
