Instructions

  1. Boil the eggs: Place eggs in a saucepan, cover with water, bring to a boil, then cover and let sit for 10-12 minutes. Transfer to an ice bath.
  2. Prepare egg whites: Cool eggs for 2-3 minutes in the ice bath, crack shells gently, peel, and slice each egg in half lengthwise.
  3. Make filling: Remove yolks and mash with avocado, mayonnaise, mustard, sriracha, paprika, salt, and pepper until smooth.
