  • 45 pound bone-in skin-on turkey breast
  • 1/2 cup unsalted butter, softened
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon fresh sage, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, quartered
  • Slices of lemon and orange
  • 1/2 cup chicken broth

Instructions

  1. Preheat the oven to 325°F (165°C). Bring the turkey breast to room temperature.
  2. In a bowl, combine softened butter with citrus zests, herbs, garlic, salt, and pepper.
  3. Loosen the turkey skin and spread half the butter mixture underneath; rub the rest on the outside.
  4. Place quartered onion in a roasting pan; top with citrus slices.
  5. Add chicken broth around the vegetables.
  6. Roast turkey for about 1 hour and 40 minutes until it reaches an internal temperature of 165°F (74°C), basting occasionally.
  7. Let rest for at least 15 minutes before carving.
