Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together all-purpose flour, cinnamon, baking soda, salt, and nutmeg.
  3. In a separate bowl, mix granulated sugar, vegetable oil, eggs, and vanilla until smooth.
  4. Combine wet and dry ingredients gently; avoid overmixing.
  5. Fold in grated zucchini and nuts if desired.
  6. Pour the batter into the prepared loaf pan.
  7. For the streusel topping, mix flour, brown sugar, granulated sugar, and cinnamon in a small bowl. Cut in cold butter until crumbly.
