  • 1 large egg yolk (room temperature)

  3. Beat the cooled butter with both sugars until well combined.

  5. Gradually fold in the dry ingredients until just combined.
  6. Chill the dough for at least one hour (preferably up to three days).
  7. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Scoop dough into balls and place on sheets with space in between.
  9. Bake for about 8-10 minutes until golden brown; let cool on racks.
