  • 300 grams sirloin steak (or rib eye, flank steak, or blade steak)
  • 1/2 white onion (thinly sliced)
  • 45 slices ginger
  • 3 cloves garlic (minced)
  • 1 stalk green onion (cut into 2-inch pieces)
  • 1 tbsp soy sauce
  • 1/2 tbsp apple vinegar (or dry apple juice/rice apple vinegar)
  • 2 tbsp water
  • 1 tsp sesame oil
  • 1 tbsp low-sodium soy sauce
  • 1 tbsp cornstarch
  • 1 tsp sugar
  • 1 1/2 tbsp mushroom sauce (instead of oyster sauce)
  • 1/2 tbsp hoisin sauce
  • 1 tsp sesame oil
  • 1/2 tbsp apple vinegar (or rice apple vinegar)
  • 1 tsp dark soy sauce (or regular soy sauce if needed)
  • 1/2 cup water

Instructions

  1. Thinly slice the beef against the grain. Marinate in a mixture of soy sauce, apple vinegar, water, and sesame oil for about 15 minutes.
  2. Prepare the sauce by mixing low-sodium soy sauce with cornstarch until smooth. Add sugar and remaining sauce ingredients; stir well.
  3. Heat oil in a wok over high heat. Sear marinated beef for 2-4 minutes until nearly cooked through; set aside.
  4. In the same wok, sauté ginger for one minute, then add garlic and onions until softened.
  5. Pour in the prepared sauce and cook until thickened; return the beef and green onions to combine well.
  6. Serve hot over steamed rice or noodles.
