  • ¾ cup water for sauce
  • 2½ tablespoons soy sauce
  • 1½ tablespoons granulated sugar
  • 1 teaspoon chicken bouillon powder (optional)
  • ¼ teaspoon dark soy sauce (optional)
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, peeled and minced
  • 2 tablespoons cornstarch
  • ½ teaspoon Kosher salt
  • ¼ teaspoon baking soda
  • Oil (as needed for cooking)

Instructions

  1. Marinate the sliced chicken in a mixture of water, salt, baking soda, and cornstarch for at least 15 minutes.
  2. In another bowl, combine water, soy sauce, sugar, chicken bouillon powder (if using), dark soy sauce (if using), and sesame oil to make the sauce.
  3. Heat a wok or large skillet over medium-high heat and add oil.
  4. Stir-fry the marinated chicken until cooked through and golden brown (about 5-7 minutes).
  5. Add minced garlic and ginger along with mixed vegetables; stir-fry for another 3-4 minutes until tender-crisp.
  6. Pour the sauce over the chicken and vegetables; toss to coat and cook for an additional minute.
  7. Serve hot over rice or noodles.
