  • 1 lb chicken breasts (sliced into thin strips)
  • 2 bell peppers (any color, thinly sliced)
  • 1 large sweet onion (thinly sliced)
  • 8 oz mushrooms (thinly sliced)
  • 6 tablespoons vegetable oil
  • Juice of 1 lemon
  • Homemade seasoned salt (to taste)
  • Cumin (to taste)
  • Smoked paprika (optional)
  • Toppings: sour cream, shredded lettuce, Pico de Gallo, guacamole

Instructions

  1. Season chicken strips with seasoned salt, cumin, and smoked paprika. Mix well and set aside.
  2. In a large bowl, combine all sliced vegetables.
  3. Heat 1½ tablespoons of oil in a heavy skillet over high heat until smoking. Add one-third of the vegetables; season and drizzle with lemon juice. Sear until crisp-tender, then remove from skillet.
  4. Add another 1½ tablespoons of oil to the skillet and cook seasoned chicken until done, about 2-3 minutes. Return all veggies to the skillet and toss together.
  5. Serve immediately with your choice of toppings.
