  • 1 tablespoon olive oil
  • 6 (4 to 6 ounces each) boneless skinless chicken thighs or breasts (cut into bite-sized pieces)
  • 4 bell peppers (sliced; vary the colors to make it pretty!)
  • 1 small onion (sliced)
  • 1 recipe or package fajita seasoning mix
  • 1 cup sour cream
  • 4 ounces cream cheese (softened)
  • 2 cups cheddar cheese (grated)

Instructions

  1. Preheat the oven to 350°F.
  2. In a large skillet, heat olive oil over medium heat and sauté chicken until cooked through. Remove and set aside.
  3. In the same skillet, sauté sliced onions and bell peppers until tender.
  4. Return chicken to the skillet and stir in fajita seasoning, sour cream, and softened cream cheese until well combined.
  5. Top with grated cheddar cheese and bake for 10 to 15 minutes until melted and bubbly.
