  • 1 3/4 lbs boneless skinless chicken breasts
  • 1 lb. grape tomatoes
  • 1 Tbsp olive oil
  • 1 (8 oz) package mozzarella balls, (drained)
  • Salt and freshly ground black pepper
  • 2 cups (40g) slightly packed fresh basil leaves
  • 3 Tbsp finely shredded parmesan cheese
  • 2 Tbsp pine nuts or chopped walnuts
  • 1 large garlic clove, (minced)
  • 1/3 cup olive oil (regular or extra virgin)
  • 3 Tbsp store-bought or homemade balsamic glaze

Instructions

  1. Soak wooden skewers in water for at least 1 hour.
  2. Preheat the grill to medium-high heat (about 425°F).
  3. Assemble skewers by threading chicken pieces and grape tomatoes.
  4. Brush with olive oil and season with salt and pepper.
  5. Grill skewers for 4-6 minutes per side until chicken reaches 165°F internal temperature.
  6. Prepare pesto in a food processor by blending basil, parmesan, pine nuts, garlic, and olive oil until smooth.
  7. Once cooked, add mozzarella balls to the ends of each skewer, drizzle with pesto and balsamic glaze before serving.
