  • 1 tablespoon fresh lemon juice
  • 1/2 cup freshly grated Parmesan cheese
  • 1 clove garlic, minced
  • 1/2 teaspoon Dijon mustard
  • 4 large croissants, halved lengthwise
  • 4 cups romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup croutons, lightly crushed

Instructions

  1. Preheat a grill pan over medium-high heat.
  2. Season the chicken breasts with olive oil, garlic powder, Italian seasoning, salt, and pepper. Grill for 6-7 minutes per side until cooked through (165°F). Let rest before slicing.
  3. In a bowl, whisk together mayonnaise, lemon juice, grated Parmesan cheese, minced garlic, Dijon mustard, and season with salt and pepper.
  4. In a separate bowl, mix chopped romaine lettuce and halved cherry tomatoes.
