  • 8 bone-in, skin-on chicken thighs
  • Water (enough to cover chicken)
  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 4 celery stalks, diced
  • 1 cup pearl couscous
  • ⅓ cup fresh dill
  • Juice of 1 lemon
  • Your favorite seasoning salt

Instructions

  1. In a large pot, add chicken thighs and cover with water. Bring to a boil over medium-high heat, then reduce to low and simmer for about 1 hour.
  2. Remove chicken from pot and set aside to cool. Add olive oil, onion, and celery to the pot; sauté until softened (about 5 minutes).
  3. Shred the chicken and return it to the pot along with seasoning salt. Stir to combine.
  4. Add pearl couscous and cook according to package instructions (around 10 minutes).
  5. Stir in chopped dill and lemon juice, adjusting seasoning as needed.
  6. Serve hot, garnished with extra dill and a drizzle of olive oil.
