  • 4 cups shredded cooked chicken
  • 2 cups all-purpose flour (for dumplings)
  • 1 tablespoon, plus 1 teaspoon baking powder
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon salt
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme, optional)
  • 3/4 cup whole milk (for dumplings)
  • 4 tablespoons butter (melted)

Instructions

  1. In a heavy-bottomed pot, melt the butter over medium-high heat. Add the onion, carrots, and celery; cook until softened (about 5 minutes). Stir in garlic and cook for another minute.
  2. Sprinkle in flour to create a roux, stirring constantly for 1 minute. Gradually add evaporated milk and chicken stock while stirring to avoid lumps.
  3. If using raw chicken, add it along with an extra cup of broth; simmer for about 20 minutes until cooked through. Shred chicken before returning it to the pot.
  4. For pre-cooked chicken: Bring soup to a boil; add shredded chicken, thyme, black pepper, and salt. Simmer uncovered while preparing dumplings.
  5. To make dumplings: In a bowl, combine flour, baking powder, salt, pepper, and thyme. In another bowl, mix melted butter with milk; pour into dry ingredients and stir until just combined.
  6. Drop spoonfuls of dumpling mixture into simmering soup; cover and cook for about 15 minutes until fluffy.
