  • 1 c graham cracker crumbs
  • c packed brown sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 c butter (melted)
  • 4 c unsweetened finely shredded coconut
  • 2 cans (14 oz each) sweetened condensed milk
  • 2 jars (10 oz each) maraschino cherries, drained and chopped
  • 2 tsp vanilla extract
  • 1 tsp almond extract

Instructions

  1. Preheat your oven to 325°F and grease a 9×13-inch baking pan.
  2. In a bowl, mix flour, graham cracker crumbs, brown sugar, baking powder, and salt. Stir in melted butter until crumbly.
  3. Press the mixture into the bottom of the baking pan.
  4. In another bowl, combine shredded coconut, sweetened condensed milk, chopped cherries, vanilla extract, and almond extract until well blended.
  5. Spread the filling over the crust evenly.
  6. Bake for 35 to 40 minutes or until golden brown around the edges.
  7. Cool on a wire rack for an hour before refrigerating for at least four hours before cutting into bars.
