  • 23 tbsp extra-virgin olive oil
  • Zest and juice of 1 lemon
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp smoked paprika
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. In a small food processor, combine parsley, cilantro, garlic cloves, olive oil, lemon zest, lemon juice, cumin, coriander, paprika, red pepper flakes (if using), salt, and black pepper.
  2. Process until the mixture reaches a lightly chunky consistency similar to chimichurri.
  3. Taste and adjust seasonings as desired; add more olive oil for a looser consistency if preferred.
