  • 1 teaspoon Aleppo pepper
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup slivered almonds
  • 1 bunch celery (about 10 to 12 stalks, thinly sliced)
  • 3 scallions (white and green parts thinly sliced)
  • 1/3 cup chopped fresh mint leaves

Instructions

  1. Make the dressing: Mince garlic and create a paste. In a medium bowl, combine garlic paste with Greek yogurt, lemon juice, olive oil, Aleppo pepper, salt, and black pepper; whisk until smooth.
  2. Toast the almonds: In a small dry skillet over medium heat, toast slivered almonds for about 2 to 4 minutes until golden brown; set aside.
  3. Assemble the salad: In the bowl with dressing, add sliced celery, scallions, and mint leaves. Stir in most of the toasted almonds (reserve some for garnish) until well mixed. Garnish with additional mint leaves and reserved almonds before serving.
