  • 2 Heads Cauliflower (cut in florets)
  • 2 to 3 Tablespoon Olive Oil
  • Salt and Ground Black Pepper (to taste)
  • 2 Teaspoon Low Carb Taco Seasoning
  • 1 ½ Cups Low Carb Pulled beef
  • 2 Small Tomatoes (chopped)
  • 1 Medium Green Bell Pepper (chopped)
  • 2 Green Chillies or Jalapéño (sliced)
  • ½ Cup Parmesan Cheese
  • 1 Cup Freshly Grated Mozzarella Cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper and spread cauliflower florets evenly. Brush with olive oil and season with taco seasoning, salt, and pepper.
  3. Roast in the oven for 5 to 7 minutes until tender.
  4. Remove from the oven and top each floret with pulled beef, tomatoes, bell pepper, parmesan cheese, and mozzarella cheese. Scatter green chilies on top.
  5. Bake again for 10 to 12 minutes until the cheese is melted and bubbly.
