  • 1 medium onion, diced
  • 1 garlic clove, minced
  • 1 celery stick, chopped
  • 1 lb carrots, peeled and diced
  • 1 lb potatoes, peeled and diced
  • 2 ½ cups low-sodium vegetable broth
  • 1 tsp Italian herbs
  • ¼ tsp dried thyme
  • ⅛ tsp black pepper, plus more to serve
  • ½ tsp fine salt, plus more to taste
  • 23 Tbsp fresh parsley, chopped

Instructions

  1. In a large pot over medium heat, melt butter or olive oil. Add onion with a pinch of salt and pepper; sauté until soft.
  2. Stir in garlic and cook for another minute. Add carrots, potatoes, celery, herbs, salt, and pepper; mix well.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat to simmer for about 20 minutes.
  4. Let cool slightly; blend part of the soup until smooth using a blender or hand blender.
  5. Return blended mixture to the pot and stir well; taste and adjust seasoning if needed. Serve hot.
