  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar (sifted)
  • pinch of salt
  • 10 chocolate sandwich cookies (like Oreos), crushed for “soil”
  • Fondant or candy carrots (store-bought or homemade)
  • Optional: green sprinkles, edible flowers, mint leaves for extra greenery

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a mixing bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and sugars until well combined.
  3. In another bowl, whisk eggs with oil until smooth. Stir in grated carrots.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Divide batter among cupcake liners and bake for 20–22 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool completely before frosting.
  7. For frosting, beat cream cheese and butter together until fluffy; gradually mix in powdered sugar and salt until smooth.
