  • 2 green onions, chopped
  • 1 bell pepper, chopped
  • 2 carrots, chopped
  • 2 tablespoons tomato paste
  • 2 cups beef broth or water
  • 1 can (14 oz) diced tomatoes
  • Cooked white rice (for serving)

Instructions

  1. Clean beef cubes with vinegar or lime juice, rinse, and pat dry.
  2. Season beef with salt, black pepper, allspice, and paprika; marinate for at least 30 minutes.
  3. Heat oil in a large pot; brown beef in batches and set aside.
  4. Sauté onion, garlic, bell pepper, green onions, and thyme until softened.
  5. Stir in tomato paste and diced tomatoes; cook for a few minutes.
  6. Return beef to the pot; add broth and scotch bonnet pepper if using.
  7. Simmer for 1.5 to 2 hours until beef is tender; add carrots during the last 30 minutes.
