  • 1 tablespoon vegetable oil

  • 2 tablespoons brown sugar
  • 1 tablespoon ginger, minced
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon sesame oil
  • 2 cups jasmine rice
  • Salt and pepper, to taste

Instructions

  1. Pat the chicken thighs dry and season with salt and pepper.
  2. In a large pot or deep skillet, heat the vegetable oil over medium-high heat. Sear the chicken skin-side down for about 5-7 minutes until golden brown.
  3. Flip the chicken and add soy sauce, brown sugar, garlic, and ginger to the pot; stir well.
  4. Pour in the chicken broth until the chicken is submerged. Bring to a gentle boil, then reduce heat to low and simmer for about 20 minutes until fully cooked.
  5. Rinse jasmine rice under cold water. Cook rice by combining it with water in another pot; bring to a boil, cover, and simmer for about 15-20 minutes until fluffy.
  6. Slice the cooked chicken and serve over rice topped with garlic ginger broth; garnish with chopped green onions and cilantro.
