  • 4 boneless, skinless chicken breasts
  • 1/3 cup olive oil
  • 2 teaspoons Dijon mustard
  • 2 cloves garlic (minced)
  • 2 medium Roma tomatoes
  • 8 ounces fresh mozzarella cheese
  • 1 cup fresh basil leaves

Instructions

  1. In a small bowl, whisk together olive oil, Dijon mustard, garlic, salt, and pepper to create the marinade. Place chicken breasts in a resealable bag or shallow dish and pour marinade over them. Refrigerate for at least 1 hour.
  2. Preheat your oven to 400°F (200°C). Line a baking sheet with foil and spray with non-stick cooking spray.
  3. On a cutting board, make four deep cuts about ½ inch apart in each chicken breast without cutting all the way through.
  4. Stuff each cut with tomato slices, mozzarella slices, and basil leaves.
  5. Bake for 25–30 minutes until the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for about 5 minutes before serving.
