Ingredients

Scale
  • 3 1/2 tablespoons white sugar (divided)
  • 1 tablespoon water
  • 1 teaspoon butter (or plant-based alternative)
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/2 cup whole raw almonds
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare your workspace by lining a medium plate or baking sheet with parchment paper.
  2. In a non-stick skillet, combine 3 tablespoons of sugar, water, butter, cinnamon, and salt over medium heat. Stir until bubbles form around the edges.
  3. Add the almonds and vanilla extract to the skillet. Stir consistently until most liquid evaporates and coats the almonds.
  4. Remove from heat, sprinkle the remaining sugar over the mixture, stir quickly, and transfer to parchment paper, separating any sticking almonds.
  5. Allow to cool completely before storing in an airtight container.
