  • 2 large boneless skinless chicken breasts
  • 1 ½ cups chicken broth
  • ¾ cup heavy cream (or half-and-half)
  • 2 teaspoons Cajun seasoning
  • 3 tablespoons butter
  • 10 oz Rotel diced tomatoes with green chilies
  • 1 tablespoon honey
  • 2 teaspoons hot sauce
  • 1 teaspoon brown sugar
  • ½ teaspoon mustard powder
  • ½ teaspoon oregano
  • 1 pinch cayenne pepper
  • 1 pinch red pepper flakes
  • Lime juice
  • Fresh cilantro (roughly chopped)
  • Olive oil (or avocado oil)
  • 3 tablespoons flour

Instructions

  1. Season both sides of the chicken breasts with Cajun seasoning. Heat olive oil in a skillet over medium-high heat and cook the chicken for about 6-7 minutes on each side until golden brown. Remove and set aside.
  2. In the same skillet, melt butter over medium heat and sauté minced garlic until fragrant. Stir in flour to create a roux and cook for 1-2 minutes until lightly golden.
  3. Gradually whisk in chicken broth and heavy cream until smooth. Add honey, hot sauce, brown sugar, mustard powder, oregano, cayenne pepper, red pepper flakes, and salt if desired. Simmer for about 5-7 minutes.
  4. Return the chicken to the skillet along with Rotel tomatoes (reserve juice) and sprinkle cheese on top. Cover until the cheese melts (about 3-5 minutes).
  5. Drizzle lime juice before serving and garnish with fresh cilantro.
