  • 1 head of garlic
  • 3 tbsp olive oil
  • 50g butter
  • 90g warm milk
  • 7g active dry yeast
  • 200g all-purpose flour
  • 200g mozzarella cheese
  • 2 egg yolks
  • Fresh parsley
  • Sprinkle of salt
  • 1 tbsp honey
  • 50g bread flour
  • 20g milk powder (optional)
  • 25g butter
  • 1 1/2 teaspoon salt
  • 1 tablespoon sugar

Instructions

  1. Roast garlic with olive oil in a ramekin at 160°C (320°F) for about 2 hours until soft.
  2. Mix softened garlic with butter and parsley to create garlic butter.
  3. Activate yeast by combining warm milk, active dry yeast, and honey; let sit for 10 minutes.
  4. In a mixing bowl, combine flour, sugar, salt, egg yolks, and the activated yeast mixture to form dough.
  5. Knead the dough using a dough hook until smooth; let it rise for about 1 hour and 30 minutes.
  6. Roll out the dough, spread garlic butter on top, sprinkle mozzarella cheese, and roll into a log shape.
  7. Cut into portions, let proof again for 30 minutes, then bake at 175°C (350°F) for about 20–25 minutes.
